This simple classy dish(Chena Mezhukkupuratty) is yet another popular one in Kerala households. You can find atleast one type of veg sautes or stir fries in a typical Kerala meal. We feel our lunch is not complete without’em. As said earlier, I’m not a big fan of vegetables and so is this dish. But that’s just me! This is absolutely loved by all my folks and my Mom literally drools over it. 😛
Elephant Foot Yam – 400gms, cut into bite size pieces,Whole shallots – ½ cup,Whole garlic – 3 cloves, Red chilli powder – 2-21/2 tsp, Turmeric powder – ¼ tsp,Pepper powder – ½ tsp,Fennel powder – a pinch, Hot water – 2 tbsp, Mustard seeds – ¼ -1/2 tsp,Salt,Curry leaves, Coconut oil
Cook the cleaned yam pieces with salt till it’s tender. Do not overcook them as it should retain a crunchy texture.
Crush whole garlic and whole small onion and keep it aside.
Heat oil in a pan and splutter mustard seeds. Add the crushed small onion and garlic and curry leaves. Fry till golden brown.
Add the spice powders and salt. Fry for couple of minutes. Add hot water and cooked chena and mix well till they are coated with masala.
Cook on low flame for 5-10 mins till it is roasted well. Remove from fire and serve hot with rice.
