Sunday Special!! Ya, I always make it a point to prepare something exotic
almost every Sunday. It wasn’t a lazy day for me (unlike other Sundays), and I had so much of pending works to do. 🙁 So busy at work all week, I have missed out on so many prompts to pen down on and also on lots of household chores. My laundry basket kept piling up and today was the day when they had a chance to be fresh and smell of Jasmine. 🙂
This recipe, is a hot one with lots of spices. Easy to make, it can be served with Rice or Roti.
250gm Skinless chicken- cut into pieces, 1/2 cup yogurt, 1/2 cup vegetable oil, 4-5 medium onions, peeled, halved and cubed, 3 inch grated ginger, 12-16 cloves of garlic, minced, 2 tsp turmeric powder, 3 tsp red chili powder, Puree of 6 fresh tomatoes, Salt, Fresh cilantro/coriander leaves, chopped – for garnish.
Dry spices to roast:
10 whole dry red chillies, 2 tsp fenugreek seeds, 2 1/2 tsp onion seeds, 2 tsp mustard seeds,1 tsp cumin seeds, 2″ stick of cinnamon, 3 tsp fennel seeds,4-6 cloves
Marinate chicken with salt, yogurt and 1 tsp turmeric.
Dry roast ingredients mentioned above and grind when cool.
Heat oil in a thick-bottomed pan. Add onions and sauté till light brown. Add grated ginger and minced garlic and continue to sauté in medium heat. Add the coarsely ground dry spices. Cook for half a minute, and stir well.
Add the chicken pieces & cook on high heat till the chicken is well browned on all sides. Add grated tomatoes, rest of the turmeric powder, red chili powder and salt to the pan and toss well till everything is well mixed.
Cook at medium heat till oil appears at the sides of the pan.
Add a cup of water, stir, bring it to a boil and cover and cook on medium heat till the chicken is fully done. Uncover and cook till you get the desired consistency.
Garnished with fresh coriander.
