A tasty, aromatic one pot meal, this pulao is also very quick to make. Sundays are usually lazy days for me because that’s when my weekend actually starts (I have weekoffs on Sunday and Monday, by the way). But this time, I thought I would cook something scrumptious and this was the end result. Must try, this is very healthy too.
Basmati rice- 1 cup, Peas- ½ cup, Oil- 1 ½ tbsp,Ghee-1 tbsp,Cumin- ½ tsp,Cinnamon- ½ inch piece,Cloves- 2 to 3, Bay leaf- 1, Onions- 2,Ginger garlic paste- 1 tbsp, Green chilly- 2, Garam masala pwd- ½ tsp, Fresh mint & coriander leaves, Salt as required
Pre-soak the rice in water for 10 mins.
Heat oil, ghee in a kadai. Add cumin, cinnamon, cloves, bay leaf & star anise. Saute and add ginger garlic paste & salt. Add finely chopped onions and saute till it turns light brown color. Add freshly chopped mint leaves, coriander leaves and slit green chillies. Combine well and add green peas, garam masala. Drain the pre-soaked rice and add to this mixture. Sauté gently until the water evaporates.
Add water and cook the rice(either in pressure cooker for three whistles or in a rice cooker).
Serve hot with a spicy gravy of your choice. I went with Chettinad Chicken(coming soon 🙂 ).
