Spring Onion Rice

There was so much of spring onion that was left over an I wanted to use them up. Thus was born this recipe. I had some left over rice from lunch too. Though a big fan of spring onion, I do not use them much except for Chinese.

Ingredients:
Basmati rice- 2 cups(Cooked)
Spring onion- 5, finely chopped (including the greens)
Ginger garlic paste- 1tsp
Green chilli- 2 (finely chopped)
Pepper- 1tsp
Cardamon-2
Tej patta- a small piece
Cumin – 1/2 tsp
Garam masala- A pinch
Salt to taste
Oil- 1tbsp
Butter/Ghee- 2tsp
Spring onion greens or coriander leaves to garnish
Method:
Heat oil in a pan and add cardamon and tej patta. Add the cumin seeds. Splutter them and then add ginger-garlic paste and saute for a min. Add the green chillies and spring onion and saute for 2 mins. Add salt and pepper and cooked rice. Mix thoroughly. Add the butter and mix again. Garnish with Coriander leaves.
Serve hot.
