I always wanted to prepare a Dum Biriyani. And what special occasion than a Sunday!
For those of you who doesn’t know what “Dum” is- It is cooking on very low flame, mostly in sealed containers, allowing the meats to cook, as much as possible, in their own juices and marrow.
I am a huge fan of the TV show “High on Food”, and I got this recipe from it. Though it is time consuming, this is my best Chicken Biriyani so far.
Basmati rice- 200gms, Chicken- 500gms, Green Chillies- 3to4, Ginger-Garlic paste- 1tbsp, Cumin powder- 1tsp, Turmeric powder- 1/2tsp, Red chilli powder- 1tsp, Chopped tmatoes-2, Curd- 1/2cup, Garam masala powder- 1tsp, Salt – to taste, Ghee- 3tbsp, Potatoes cubed and fried- 2, Fried Onions- 2cups, Coriander leaves- 1/2cup, Fried cashews- 10, Fried raisins- 10, Saffron in a glass of milk, Fried masala(Cinnamon stick, 3cloves, 2cardamons, 1star anise)
Soak rice for 30 mins and cook in salt and little oil till half done.
Marinate the chicken with Chillies, Ginger-garlic paste, half of the fried onions, all the powders, salt, tomatoes and curd.
In a thick bottom pan, add ghee, and put the chicken mixture. Cook closed for 5mins in medium heat.
Add the following as layers- fried potatoes, browned onion, coriander leaves, dry fruits(fried). Add the half cooked rice and spread as another layer. Add the fried masala and saffron milk.
Make wheat dough and seal the sides of this pan with the dough. Place lid.
Cook in low flame for 30 mins.
