Though my favorite is any Chicken dish, at times, eggs outdo it- simply because it is so easy to cook and tastes equally appealing.
This “Naaden Omelete” can be a quick snack, but I prepare it whenever an extra dish is required.
Coconut oil- 2tbsp
Shallots- 1/2 cup -sliced
Green Chillies- 1tsp
Curry leaves- 8
Eggs- 3- beaten
Pepper powder- 1/4tsp
Heat oil in a pan and fry the shallots for a minute.
Add green chillies and curry leaves an continue frying for a couple of minutes. Add the beaten eggs, salt and pepper powder. Cook till it starts to set.
Flip the omelete over and cook the other side.
Fold into half. Serve hot!
