Potato Saute

My adventure with Potatoes continue, especially when I’m too lazy to cook. Today is one of those days, cummon, you can’t blame me, esp. since I’m home after my night shift duty from work.Migraine

This is a classic version of Kerala cuisine and adds a unique flavour if Coconut oil is used.

Adapted from a Famous Cookbook.

Potato Saute


Potatoes- 3- cut into cubes

salt- 1tsp

Turmeric powder- 1/2tsp

Reg chillies-3- grounded

Coconut oil- 2tbsp

Onion- 1

Garlic- 3cloves

Curry leaves

Crushed Peppercorns/Pepper powder- 1tsp


Boil cubed potatoesin about 6 cups of water with salt, pepper and chillies ground for about 5mins.

Remove and set aside to cool.

Heat oil in a pan, saute onion for a minute. Add garlic and curry leaves and fry for a minute more.

Add pepper powder and potatoes and stir fry until potatoes are crisp and golden.
