Varutharacha curry literally means in roasted coconut curry. One of the most popular foods from the Kerala cuisine, it can be made with Egg, fish, chicken and what not!
It goes well with Idiyappams and Appams.
Egg – 4 (boiled)
Onion – 2
Tomato – 1
Green Chilli – 2
Ginger- garlic paste -1tsp
Coriander powder -1tbsp
Chilli powder – 1tbsp
Pepper powder – 1/2tsp
Lime juice- 1/2 spn
Grated coconut which is fried and grinded – 2tbspn
In a pan, add oil and onion. Add ginger-garlic paste and curry leaves and saute well till onions are brown.
Add spice powders, tomatoes, green chillies, Salt. Add little water and cook for some time.
Add the grind coconut to it.
Slice the boiled eggs into two halves and add. When the gravy becomes thicker, remove from fire.
Add lime juice and garnish with coriander leaves.
