I hate potatoes!!! But, I know there is a majority of you who love to have them. And P falls in that group.
So, recently, I was checking few recipes made of Aloo, and came across this one (I have slightly modified it). It turned out to be simple yet very tasty.

Potatoes – 2
Capsicum – 1
Chopped onion- 1
Ginger-garlic paste- 1/2 teaspoon
Coriander powder- 1/2 tablespoon
Chilli powder- 1 teaspoon
Turmeric powder- 1/4 teaspoon
Garam Masala powder- 1/2 teaspoon
Jeera – 1tsp
Salt to taste
Oil- 1 tablespoon
Heat oil in a pan. Splutter jeera. Add onions and saute till they turn light brown. Add the ginger paste.
Add salt, coriander powder, chilli powder and turmeric powder and mix well.
Add the diced potatoes and capsicum.
Cover and cook on low heat till the vegetables are done, about 20 mins. Sprinkle the Garam masala powder and mix well.
Garnish and serve hot with Rice or Roti.
