Another yummy evening snack to blow your mind away. Treat yourself with a garam (hot) cup of chai (tea), especially on a rainy evening.
A simple one to prepare, this “Ulli Bajji” is famous in all Kerala homes. I have had this from Singhad Fort, Pune (http://en.wikipedia.org/wiki/Sinhagad) too. Apparently this “Kanda Baji“ is a must have when you visit the place.
Maida (all-purpose flour) or Besan flour – 1 cup
Salt- to taste
Onion – 3
Ginger- a small piece
Green Chilly- 4
Chilli Powder – 1tsp (optional)
Oil – for deep frying
Cut green chillies and ginger into very tiny pieces.
Mix all the ingredients except oil, in a bowl. Add in water as required. The consistency should be a little less than that of the batter you make for rotis/chappathis and not as loose as that of dosa.
Pour in one spoon of this mixture in hot oil.
